{"id":5669,"date":"2015-03-25T08:03:17","date_gmt":"2015-03-25T07:03:17","guid":{"rendered":"https:\/\/www.saporedicina.com\/es\/?p=5669"},"modified":"2022-02-10T11:32:21","modified_gmt":"2022-02-10T10:32:21","slug":"gastronomia-ano-nuevo-chino","status":"publish","type":"post","link":"https:\/\/www.saporedicina.com\/es\/gastronomia-ano-nuevo-chino\/","title":{"rendered":"Gastronom\u00eda del a\u00f1o nuevo chino"},"content":{"rendered":"<p><img decoding=\"async\" src=\"https:\/\/www.saporedicina.com\/es\/wp-content\/uploads\/2015\/03\/gastronomiaa\u00f1onuevochino.jpg\" alt=\"gastronomia a\u00f1o nuevo chino\" title=\"gastronomia a\u00f1o nuevo chino\" width=\"700\" height=\"376\" class=\"aligncenter size-full wp-image-5672\" srcset=\"https:\/\/www.saporedicina.com\/es\/wp-content\/uploads\/2015\/03\/gastronomiaa\u00f1onuevochino.jpg 700w, https:\/\/www.saporedicina.com\/es\/wp-content\/uploads\/2015\/03\/gastronomiaa\u00f1onuevochino-300x161.jpg 300w\" sizes=\"(max-width: 700px) 100vw, 700px\" \/><\/p>\n<p>Hace unas semanas terminaron las festividades del a\u00f1o nuevo chino y hoy quiero hacer un repaso de uno de los aspectos m\u00e1s importantes, la comida. \u00bfQu\u00e9 se come y por qu\u00e9 en el a\u00f1o nuevo chino?<\/p>\n<p><em>Este art\u00edculo es una adaptaci\u00f3n de la serie de art\u00edculos sobre el a\u00f1o nuevo chino escritos por <a href=\"https:\/\/www.saporedicina.com\/es\/insenando-chino-a-los-diablos-bianco\/\" title=\"Ense\u00f1ando chino a los diablos blancos: Entrevista a Luna\" target=\"_blank\" rel=\"noopener noreferrer\">Luna Zhou<\/a> y publicados recientemente en <a href=\"https:\/\/www.eschinaspace.com\/\" title=\"EsChina Space: Siente China en Barcelona\" target=\"_blank\" rel=\"noopener noreferrer\">la web EsChina Space<\/a>.<\/em><strong><!--more--><\/strong><\/p>\n<h2>Festival LaBa &#8211; \u814a\u516b\u8282<\/h2>\n<p><img decoding=\"async\" src=\"https:\/\/www.saporedicina.com\/es\/wp-content\/uploads\/2015\/03\/labajie.jpg\" alt=\"laba jie\" title=\"laba jie\" width=\"700\" height=\"467\" class=\"aligncenter size-full wp-image-5674\" srcset=\"https:\/\/www.saporedicina.com\/es\/wp-content\/uploads\/2015\/03\/labajie.jpg 700w, https:\/\/www.saporedicina.com\/es\/wp-content\/uploads\/2015\/03\/labajie-300x200.jpg 300w\" sizes=\"(max-width: 700px) 100vw, 700px\" \/><\/p>\n<p>Aunque mucha gente no lo sepa las festividades del a\u00f1o nuevo chino empiezan veinte d\u00edas antes de la \u00abnoche vieja\u00bb china, es decir el d\u00eda 8 del ultimo mes del calendario lunar.<\/p>\n<p>En este d\u00eda concreto se preparan dos tipos de platos:<\/p>\n<h3>Ajos Laba (\u814a\u516b\u849c, Laba Suan)<\/h3>\n<p>Este plato se prepara con ajos de cuello duro (los de piel violeta) y se sumergen en vinagre de arroz y un poco de az\u00facar, luego se dejan fermentar durante veinte d\u00edas hasta que se vuelven de color verdoso. Precisamente, cuando est\u00e1n listos (veinte d\u00edas despu\u00e9s), coincide con la \u00abnoche vieja\u00bb china y normalmente se comen junto con los jiaozi (o empanadillas chinas).<\/p>\n<h3>Gachas LaBa (\u814a\u516b\u7ca5, Laba Zhou)<\/h3>\n<p>Con m\u00e1s de mil a\u00f1os de tradici\u00f3n el Laba Zhou es como unas gachas con diferentes tipos de arroz, alubias (o frijoles) y frutos secos. Por lo menos, se deben incluir ocho tipos diferentes de ingredientes (algunas familias chinas a\u00f1aden hasta quince).<\/p>\n<p>Tradicionalmente el Laba Zhou es un s\u00edmbolo para pedir una buena cosecha al a\u00f1o nuevo que tiene que venir.<\/p>\n<h2>Festival Jizao &#8211; \u796d\u7076\u8282<\/h2>\n<p><img decoding=\"async\" src=\"https:\/\/www.saporedicina.com\/es\/wp-content\/uploads\/2015\/03\/zhimatang.jpg\" alt=\"zhimatang\" title=\"zhimatang\" width=\"700\" height=\"466\" class=\"aligncenter size-full wp-image-5676\" srcset=\"https:\/\/www.saporedicina.com\/es\/wp-content\/uploads\/2015\/03\/zhimatang.jpg 700w, https:\/\/www.saporedicina.com\/es\/wp-content\/uploads\/2015\/03\/zhimatang-300x200.jpg 300w\" sizes=\"(max-width: 700px) 100vw, 700px\" \/><\/p>\n<p>El Festival se celebra el d\u00eda 23 del \u00faltimo mes del calendario lunar y para muchos es el inicio oficial del a\u00f1o nuevo. El nombre del festival viene de \u796d\u7076 (j\u00ecz\u00e0o), donde \u796d (j\u00ec) que significa culto y \u7076 (z\u00e0o) significa estufa (en la china antigua se utilizaba para cocinar), en otras palabras el festival significa el culto a la cocina y esta dedicado al dios Zaowang, que fue mandado por el dios supremo Yudi a la tierra para ense\u00f1ar a las familias a usar el fuego para cocinar. Una vez al a\u00f1o (el d\u00eda del Festival Jizao), Zaowang retorna al cielo para informar a Yudi de como se han comportado las familias.<\/p>\n<h3>Dulce de S\u00e9samo (\u829d\u9ebb\u7cd6, Zhimatang)<\/h3>\n<p>En este festival se preparan y comen unos dulces hechos de pasta de az\u00facar con una capa de crema de s\u00e9samo y recubiertos de semillas de s\u00e9samo y a veces frutos secos. <\/p>\n<p>La tradici\u00f3n manda preparar estos dulces para que Zaowang se le quede la boca pegajosa y no pueda hablar mal de la familia al Dios supremo.<\/p>\n<h2>Noche vieja o Chuxi &#8211; \u9664\u5915<\/h2>\n<p><img decoding=\"async\" src=\"https:\/\/www.saporedicina.com\/es\/wp-content\/uploads\/2015\/03\/gastronomiaa\u00f1onuevochino.jpg\" alt=\"gastronomia a\u00f1o nuevo chino\" title=\"gastronomia a\u00f1o nuevo chino\" width=\"700\" height=\"376\" class=\"aligncenter size-full wp-image-5672\" srcset=\"https:\/\/www.saporedicina.com\/es\/wp-content\/uploads\/2015\/03\/gastronomiaa\u00f1onuevochino.jpg 700w, https:\/\/www.saporedicina.com\/es\/wp-content\/uploads\/2015\/03\/gastronomiaa\u00f1onuevochino-300x161.jpg 300w\" sizes=\"(max-width: 700px) 100vw, 700px\" \/><\/p>\n<p>El Chuxi, que literalmente significa \u00ab<a href=\"https:\/\/www.eschinaspace.com\/el-ano-nuevo-chino-tercera-parte\/\" title=\"A\u00f1o nuevo chino\" target=\"_blank\" rel=\"noopener noreferrer\">eliminar el demonio Xi<\/a>\u00ab, es la \u00abnoche vieja\u00bb china y se celebra la comida familiar m\u00e1s importante. Normalmente las familias no van a escatimar en gastos para esta comida y van a servir productos frescos y de buena calidad. Sin embargo, hay tres cosas que no pueden faltar en la cena de a\u00f1o nuevo:<\/p>\n<h3>Empanadillas Chinas (\u997a\u5b50, jiaozi)<\/h3>\n<p>Los jiaozi son indispensables en cualquier cena de noche vieja que se precie, normalmente se hacen a mano y luego se preparan hervidos, al vapor o fritos seg\u00fan la familia o la regi\u00f3n de China.<\/p>\n<p>La raz\u00f3n es muy simple ya que \u997a\u5b50 tiene una pronunciaci\u00f3n muy similar a \u4ea4\u5b50 (jiaozi) que significa cambiar de a\u00f1o.<\/p>\n<h3>Pollo (\u9e21, ji)<\/h3>\n<p>El Pollo tambi\u00e9n es un s\u00edmbolo de buen augurio ya que \u9e21 tiene una pronunciaci\u00f3n muy similar a \u5409 (ji) que significa buena fortuna.<\/p>\n<h3>Pescado (\u9c7c, yu)<\/h3>\n<p>El pescado otra vez es un s\u00edmbolo de buenos deseos para el a\u00f1o nuevo ya que \u9c7c tiene una pronunciaci\u00f3n similar a \u4f59 (yu) que significa abundancia, es decir que se pide al a\u00f1o nuevo que no falte de nada.<\/p>\n<p>Hay muchos otros platos que depende de la zona de China tambi\u00e9n representan los buenos deseos para el a\u00f1o nuevo, como por ejemplo el pastel de a\u00f1o nuevo (niangao \u5e74\u7cd5) pero si los enumerara todos nunca acabar\u00eda.<\/p>\n<h2>Chuyi &#8211; \u521d\u4e00<\/h2>\n<p><iframe src=\"https:\/\/www.youtube-nocookie.com\/embed\/Krrp6CWo2YE?modestbranding=1&amp;autohide=1&amp;showinfo=0&amp;rel=0\" width=\"700\" height=\"416\" frameborder=\"0\" allowfullscreen=\"allowfullscreen\"><\/iframe><br \/>\n<\/br><br \/>\nEl Chuyi es el primer d\u00eda del a\u00f1o lunar, este d\u00eda se suceder\u00e1n las comidas familiares y las visitas a los amigos de la familia, pero si algo no puede faltar es:<\/p>\n<h3>Pan de flor (huamo \u82b1\u998d)<\/h3>\n<p>Los huamo son unos panecillos hechos al vapor similares al mantou (\u9992\u5934) pero que tienen formas diversas (como de flores o animales). Normalmente se prepara uno para cada miembro de la familia. Uno de ellos contendr\u00e1 un fruto seco y seg\u00fan la tradici\u00f3n, el miembro de la familia que coma el panecillo con el fruto seco ese a\u00f1o se conviertir\u00e1 en el cabeza de familia.<\/p>\n<h2>Festival Yuanxiao &#8211; \u5143\u5bb5\u8282<\/h2>\n<p><img decoding=\"async\" src=\"https:\/\/www.saporedicina.com\/es\/wp-content\/uploads\/2015\/03\/tangyuan.jpg\" alt=\"tangyuan\" title=\"tangyuan\" width=\"700\" height=\"467\" class=\"aligncenter size-full wp-image-5680\" srcset=\"https:\/\/www.saporedicina.com\/es\/wp-content\/uploads\/2015\/03\/tangyuan.jpg 700w, https:\/\/www.saporedicina.com\/es\/wp-content\/uploads\/2015\/03\/tangyuan-300x200.jpg 300w\" sizes=\"(max-width: 700px) 100vw, 700px\" \/><\/p>\n<p>El Festival Yuanxiao, o m\u00e1s conocido como el festival de los farolillos, se celebra en la primera luna llena del a\u00f1o, es decir el quinceavo d\u00eda del primer mes lunar. Para la mayor\u00eda de chinos el Yuanxiao es el \u00faltimo d\u00eda de las festividades de a\u00f1o nuevo.<\/p>\n<p>A parte de disfrutar de los farolillos que se pueden ver en casi todas las ciudades de as\u00eda, este d\u00eda la tradici\u00f3n manda comer lo siguiente:<\/p>\n<h3>Bolas de arroz glutinoso (\u6c64\u5706, Tangyuan)<\/h3>\n<p>Los tangyuan o Yuanxiao (\u5143\u5bb5) son unas bolas de arroz glutinoso que pueden tener un relleno dulce o salado (carne) y se sirven hervidas.
